When you are done with a steep, lift the lid, dump the spent leaves into the bowl, and place the lid back on. This keeps the messy leaves hidden and your table looking clean throughout your tea session. Just remember to empty and rinse it out when you're finished.
You need a Jianshui if you want to practice "Dry Brewing" (Gan Pao). This means you are moving away from the large, bulky plastic tea trays that require a drain pipe and a bucket.
